Sushi term

Omakase お任せ

Omakase means "I'll leave it to you" — you hand the meal over to the chef, who serves a course-by-course tasting built from the best of the day. It's the most personal, and often the most memorable, way to eat sushi.

Omakase — Sushi

A conversation, not a menu

There's no ordering. The chef reads the market, the season and sometimes your reactions, pacing the meal from light to rich and saving the showpieces for the end. Sitting at the counter is part of the experience.

Etiquette that helps

Tell the chef about allergies up front, eat each piece promptly, and it's fine to say what you love. Trust is the whole premise — that's what "omakase" literally asks of you.

Insider tip. Book the counter, not a table, for omakase — the point is watching and talking to the chef as each course is made.
