Chutoro 中トロ

Chutoro is the diplomat of the tuna world — the medium-fatty cut between lean akami and unctuous otoro. It has the melt of otoro but keeps enough of tuna's clean, meaty flavor that many people quietly prefer it.

Where otoro can be almost too rich two pieces in, chutoro stays interesting. It's the cut to order when you want luxury without fatigue.

Where it sits on the fish

Chutoro comes from the upper belly and the area toward the back, blending the marbling of the belly with the firmer flesh above it.

Insider tip. If you can only order one tuna piece, make it chutoro — it shows off both sides of the fish at once.
