Nigiri 握り
Nigiri — short for nigiri-zushi, "hand-pressed sushi" — is the archetype: a hand-formed pillow of seasoned rice with a slice of fish laid over it and a whisper of wasabi in between. It looks simple, which is exactly why it's hard.
Built for one bite
A good piece is sized and pressed to be eaten whole. The rice should hold together on the way to your mouth and collapse the instant you bite — too tight and it's a dumpling, too loose and it falls apart.
Reading the counter
Chefs often brush their own nikiri (a sweet soy glaze) on each piece so you don't need the soy dish at all. When they do, eat it straight.
Insider tip. Flip it fish-side down to dip so the rice never touches the soy — soaked rice falls apart and over-salts the bite.
