Hamachi is young yellowtail — buttery, rich and clean, with a fattiness that makes it one of the most beginner-friendly fish at the sushi bar. It's the fish that wins people over after tuna.

A fish by many names

In Japan the same fish is called by different names as it grows (a "shusse-uo," or promotion fish) — hamachi, buri and more depending on size and season.

Hamachi kama

The collar (kama), grilled, is a prized izakaya dish — fatty, tender meat right behind the gills that many regulars order first.
