Ramen term

Shio

Shio ("salt") ramen is the lightest, clearest broth of the classic four — seasoned mainly with salt so the underlying stock and toppings shine through. It's delicate where tonkotsu is bold.

Shio — Ramen

The oldest seasoning

Salt is the original ramen tare, and shio broths are often the purest window into a shop's dashi — there's nowhere for a weak stock to hide.

Clean and coastal

Shio ramen frequently uses chicken or seafood stock and pairs with lighter toppings, giving a clear golden bowl that feels refined rather than filling.

Insider tip. Judge a shop by its shio — with nothing to mask the broth, it's the most honest bowl on the menu.
