Miso 味噌

Miso ramen is the hearty northern style — broth enriched with fermented soybean paste until it's thick, warming and faintly sweet. It was born in cold Hokkaido and tastes like it was built for winter.

Miso ramen is relatively young, created in Sapporo in the mid-20th century. It's often served with corn, butter, bean sprouts and ground pork — toppings that suit the robust broth.
